Our anchovies are prepared as our sardines in oil: integer, whole, headed,gutted, fried in oil, drained, put into boxes by hand, followed the blue (this fish back to theaperture), covered an extra virgin olive oil, 2peppercorns and a small piece of bay leaf.  Their taste improve by aging more slowly that the sardine because the flesh anchovy does not open his taste yet. The taste is special. It is coming from seasonal fishing thus "millésime". The stock is limited, should know how to take advantage of it when you have. A tin of 2, 3 years of age is a gustative.
